Is it just as simple as purchasing any multi touch monitor , enabling TUIO support within Studio One i.e. in the context of Mac OS X usage ? thanks

Yes, but make sure to install the touchscreen drivers if the particular touch screen you purchase has a driver. Should be very straight forward after that.
