Better way to have multiple instances of an instrument in Studio One 3?

This may be a basic question. I'm a novice and trying to record a symphony-like composition using virtual instruments in Studio One 3 Artist (with the VST add on).  I'm using Presence XT, DSK Orchestra, DSK Virtuoso, VCMO Orchestra & one other instrument.  If I want to have 2 or 3 different instruments from one of those (i.e., a violin track and a separate cello track using the DSK Virtuoso instrument), is there a better way to do that than just creating a separate instrument track for each new instrument?  

One problem I have is I record a track and it records fine, plays back fine, etc.  At some point, not sure when it is triggered, I see the fader volume moving but hear no sound from that track.  All the others play but not that one.  I think it may happen if I have two instances of the same instrument running for too long?

Any suggestions on how to improve/simplify my recording using multiple instances of the same instrument (but with different presets)? Is there a way to use the midi channel to route it somehow? Even though I have no idea what that means :)
