Whenever I have Studio One 3 open, it prevents anything else from playing- youtube, itunes etc., which is quite annoying when I need to listen to certain things while I'm recording. How do I stop it from preventing other media from playing?

Audio devices like perhaps ASIO devices and Windows audio devices cannot easily be shared that way.  

You can tell Studio One to release the audio device in the background via Options > Advanced > Audio "Release audio device in background" but there may not be an easy way to record in Studio One while at the same time listening to other media apps playing with the same or different drivers, depending on what OS you may be on.
