When the new software updates occurred for my universal control on my iPad, all of my preset mixes disappeared.  Is there a way to recover those or are they gone forever?

Did you also update the firmware on your mixer? The new UC Surface 3.0 app is not compatible with the old scene structure from 1.10 firmware. You need to update the firmware to 2.0. Be aware that this will convert your old scenes to the new Project/Scene workflow. PreSonus has some videos posted on YouTube explaining how this works.
