I want to record our exact mix. So I am wondering if this records it without my EQ’ing dialed in, or if it is possible to capture that also.

The manual doesn't say anything to this theme, but the Block Diagrams (section 5.2) show this: Gain > Low Cut > USB -> Equalizer > Mute > Level > Pan. This means that the USB signal is "pre" processing and you will not be able to include EQ, compressor and effects in your recording.

The Series III mixers allow pre or post processing recording.
