I currently have a PerSonus StudioLive 64s 

That runs to PreSonus SW5E 5-port Audio Video Bridging Switch with PoE.

I use 2 PreSonus StudioLive 32R = 64 Channels as Stage Boxes

What I want to to is avoid buying a bulky 64 Channel mixer and Capture all Audio into a broadcast room 50 feet away from front of House. 

What Device would I need to take advantage of AVB Splitter and Manage the 64Channels Separately y from FOH? 

I will be using Studio One 5 for my broadcast Mix.

You can do it all through USB on the 64s since that's your main mixer. Create a different mix and just stream that.

You can setup a matrix or just use another aux to mix the broadcast feed.  A matrix is probably your best choice.  Then, send that feed to an external recorder or stream (as was presented as another option).
