If you want to use your Studio 192 stand alone (not connected to a computer) as a stand alone A/D converter, how can you tell which sample rate it's set to?

The Studio 192 will switch automatically to the clock rate of the external clock source. There is no indication on the Studio 192 itself however. Make sure that you have all your cables set correctly to ensure proper recording.
