I recently bought PreSonus Orchestra. I would like to use some of the instruments in my other DAW. How can I extract .soundset files?

What you are asking is not possible.

You would need to play individual sounds to individual tracks and bounce them individually to get individual sounds. However as many sounds have multiple layers to them for velocity, as is the case with many orchestral plug-ins (not just this one for Studio One), consider investing in a plugin that you can use across different DAWs instead if that is a requirement for your composition needs to use more than one program with the same sound library.
