But can I use CAT8?  I am upgrading our infrastructure to fiber from the stage to FoH and would like to use CAT8 to board/instruments.

Technically yes. It is recommended that any cable used with PreSonus AVB products be verified by ETL or UL to meet ANSI/TIA-568-C.2 or ANSI/TIA-568.2-D spec. 

PreSonus has not specifically tested any CAT8 cables. There are no performance benefits for AVB because it only requires a gigabit connection. It would probably be more cost-effective to use high-quality S/FTP CAT6 cable than using CAT8 since they are both only rated for 300ft or 100m maximum. Whether you are using pre-made patch cables or terminating your own, make sure you use ETL or UL verified parts that at least meet ANSI/TIA-568-C.2 spec.
