Can one use a midi controller with an iPad to have real faders with UC surface?

No. UC Surface cannot be controlled via MIDI. We do however, have a solution for this called the CS18AI. It is essentially a physical mixer version of UC Surface to control the RM/RML series mixers. http://www.presonus.com/products/StudioLive-CS18AI
