I know that a MacBook Pro can be used as an endpoint on the AVB system.  However, can it also be used as an audio source into the AVB system?

It would be awesome to use a MacBook Pro for processing by inputing channels from the AVB network (StageBoxes), processing with native or non-native plugins via S1Pro, then have the SL console retrieve those processed channels via AVB from the MacBook Pro.

Yes. any Mac that is AVB capable can be used as both an audio source and as an endpoint. This can be a complex setup and will require understanding how to use either the Apple AVDECC controller or a 3rd party AVDECC controller to route the streams to and from the Mac.
