What's the best way to route the main outputs on Quantum to multiple outputs so I can monitor on different speakers? I also want to send the main mix to different headphone amps. I got so used to being able to route anything anywhere in Zen Studio that I forgot to ask about this before I bought Quantum. So far Quantum is a big relief over the unreliability of Zen Studio but I miss this one feature. Any ideas on how I can do this in Logic Studio X?

The Quantum is a pure input and output interface.  You you route, mix and otherwise monitor any I/O within the DAW you use.  Now every DAW is a bit different.  With Studio One for example, you could create Cue Mix outputs that would allow you to send any audio track to the Main Outs and any Cue Mix outputs at the same time.
