I am writing a song in the style of a hymn. I need to be able to have chords where the different parts hold for different lengths of time. For example the top soprano note will be a dotted half note and the next note down will be half  note that then moves into a quarter note. I have included an example of what I want to create in the picture. Every time I try and change the bottom note to being without the dot it does the same action to the whole chord. Any ideas on how to accomplish this?

Yes, you need to write the G in voice 1, and F to E in voice 2. The stems will automatically go in the right direction. Then write the B+F chord on the 4th beat just in voice 1.
Then you'll have a spare quarter note rest on the 4th beat in voice 2 to clean up - just right click that rest and you can hide it.
