I can see how to establish the key for a song and create a chord track for that song, but is there also a way

to insert key changes in a song and have that reflect in the chord track? I'd like to be able to use the chord track functions to explore different ideas.

Similar to how I can enter in time signature changes in a song.

Sure, that's one of its strengths! You can hold Option (Mac) / Alt (Windows) and draw in new parts in the cord track, then double click it and choose the chord you want to audition.

Also make sure to have "Follow Chords" set to "On" in the track inspector, or it won't do anything.

This works with both audio and MIDI / instruments.

Not quite what I'm asking about or looking for, but useful information just the same.

Hopefully the attached image will make more sense of it.

Edited: Since the image is a bit small to read, the arrow is pointing to how to follow, in this case, set to scale. This first portion is showing a key signature of C# minor using a C#minor scale, the second section is showing a key signature of G major, using a G major scale.
