Question

On most of my projects i can click on the inserts in a channel and open the edit to adjust the wet dry mix on a reverb for example, however on one project it simply wont open any of the inserts.

(ive recently upgraded from Producer 2 to Pro 3, but this shouldnt be an issue because its working with other old porjects)

Any ideas?

It may in some way be a corrupted song file, if none of it's inserts will open but you don't have that problem in other songs.

Try File > Save to New Folder and see if the new copy of it allows opening plugin.   If not, if you experience this in other songs, please make a support ticket so that a support agent can try to help you to resolve it.
