How much do hairpins in Notion 6 change the dynamic level by default - one step, for example f to mf? How can that be varied - by placing dynamic markers immediately adjacent to the hairpin? Would you expect the new level to continue afterwards indefinitely until altered by a new dynamic marking?

Yes,
if you place dynamics at the end of a hairpin it will alter the change. And then it would continue in that new dynamic level until a new one is placed.
